what you need
- 60 maraschino cherries with stems
- 3 Tbsp. light corn syrup
- 2 cups sifted powdered sugar
- 3 Tbsp. butter
- 1/4 tsp. salt
- 60 chocolate kiss type candies
- 1-1/2 lb. chocolate for coating
- Slivered almonds, approximately 120
- Red cake decorating GEL (tube type)

Drain cherries. Let set on paper towels. Combine syrup, sugar, butter & salt. Knead until smooth. Chill if too soft. Place 3/4 tsp. mixture around cherry, leave stem exposed. Place on a tray lined with waxed paper. Chill until firm.
Meanwhile, unwrap chocolate candies & set aside. Melt dipping chocolate (DO NOT MELT CANDIES). Dip cherries completely coating with melted chocolate. Place flat side of kiss-type candy against end of cherry without stem. Leave stem exposed to form "tail".
Place 2 slivered almonds between candy & cherry to form "ears". Lay on side with pointed end of candy forming "nose". Using decorating gel, make 2 dots for eyes, and one on tip of nose.
Return to wax covered tray. Continue with other cherries and candies. Cover & chill until firm. Store in a cool place 1-2 weeks. Makes 60 "MICE".
