Banana-Chocolate Chip Pancakes

what you need
- 1 1/2 cups all-purpose flour
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/8 tsp. ground ginger
- 2 ripe bananas, mashed
- 1 cup fat-free milk
- 1 large egg, lightly beaten
- 1 tsp. vanilla extract
- 1/4 cup mini chocolate chips
make it
Combine the flour, sugar, baking powder, salt and ginger in a bowl. In a separate bowl, combine the bananas, milk, egg and vanilla. Stir the flour mixture into the banana mixture until smooth. Gently fold in the mini chocolate chips. Let the batter stand at room temperature for 10-15 min.
Preheat a nonstick griddle or large nonstick skillet over medium heat. Using a scant 1/4 cup for each pancake, pour the batter onto the pan. Cook just until the tops are covered with bubbles and the edges are browned, 2-3 minutes. Flip and cook until browned, about 2 minutes longer. Serve immediately.
