what you need
- 4 medium sized sweet potatoes
- 1 cup granulated sugar
- 1 cup light brown sugar
- 6 small eggs or 5 large eggs
- 1/2 stick butter, softened
- 2 Tbsp. flour
- Cinnamon or nutmeg
- 1 tsp. vanilla
- 1 large can evaporated milk
- 2 unbaked pie crusts

Wash potatoes well. Boil potatoes with skin on. Potatoes are done when a fork pierces the potato easily.
Drain, cool, and peel potatoes. Place in large bowl and mash well. I use a hand mixer on low speed. Add sugars, eggs, and softened butter. Mix well. Stir in flour, cinnamon or nutmeg, and vanilla. Add milk and mix till smooth.
Pour into unbaked pie shells.
Bake at 350 degrees F until set.
Notes
Tastes great served slightly warm and even better chilled. Fancy folks would say serve with whipped cream. We like to cut a happy slice and eat it with our hands (like a slice of pizza!)
