Grandmother's Mixed Fruit Cocktail Cake

what you need
- 2 cups a.p. flour
- 1 1/2 cups sugar
- 2 eggs
- 2 tsp. baking soda
- 1 can undrained fruit cocktail
- 1 stick margarine or butter
- 1 cup sugar
- 1/2 cup evaporated milk
- 1/2 cup chopped pecans
- 3/4 cup flaked coconut
- 1 tsp. vanilla
make it
Grease and flour oblong cake pan. Mix first 5 ingredients with a spoon and pour into cake pan. Bake at 300 degrees for 45 minutes. Poke holes in top of cake with a fork.
TOPPING:
While cake is baking, mix the butter or margarine, 1 cup sugar, and 1/2 cup of canned milk in a pot on the stove. While stirring let mixture come to a rolling boil for 4 minutes. Cool 5 minutes. Add nuts, coconut and vanilla. Stir and pour on cake while both are hot.
Notes
My Grandmother use to make this cake, I started making it 43 years ago.
You have to stir the topping constantly while it is boiling or it will boil over on to the stove. I hope everyone enjoys this cake as much as we do, leave it in the pan.
