what you need
- 2 eggs
- 2 Tbsp. melted butter
- 1 1/2 cups mashed, ripe bananas (about 3-4 bananas=1 1/2 cups)
- 1 cup sugar
- 1 tsp. vanilla extract
- 1/2 tsp. nutmeg
- 2 dashes cinnamon
- 2 cups Bisquick
- 1/2-1 cup chopped nuts (if desired)
make it
Preheat oven to 350. Butter and flour a bread pan, then set aside.
Beat together all the ingredients except the Bisquick and the nuts. After combining them all, move them into the blender and blend until all ingredients are smooth and consistent. Pour the blended wet ingredient mixture back into original bowl, and stir in the Bisquick. Make sure all the Bisquick is wetted and thoroughly stirred in. If desired, add nuts now. Do a few final stirs of the mixture to be sure everything is well blended.
Pour the batter into the buttered and floured bread pan. Bake in the oven at 350 for one hour (check after 50 minutes, ovens vary).
Notes
After cooking, let the loaf cool for a bit (about 15 min.) then slice it. I recommend toasting a slice and spreading butter on it....mmmm. Never eat without the company of JEFF, a cup of milk or hot tea! (Serves well as a breakfast item as well.)
