West Coast Grilled Chicken Breast

- 4 skinless, boneless chicken breast halves (about 5 oz. each)
- 1 1/2 Tbsp. EVOO (extra virgin olive oil)
- 2 Tbsp. lemon juice
- 1 Tbsp. Dijon mustard
- 2 tsp. white wine Worcestershire sauce
- 1 large garlic clove, minced
- 1 tsp. grated lemon zest
- 1/4 tsp. crushed hot red pepper

Flatten the chicken breast to an even thickness of about 3/4 inch. In a shallow dish, just large enough to hold the chicken in a single layer, combine the olive oil, lemon juice, mustard, Worcestershire sauce, garlic, lemon zest and hot pepper. Add the chicken and turn to coat evenly. Cover and refrigerator, turning often for at least 1 hour and up to 6 hours.
Prepare a medium-hot fire. Grill the chicken, turning once or twice and brushing often with the marinade, until the chicken is white throughout but still juicey, about 10 to 15 minutes.
