what you need
- 2 cups all-purpose flour
- 2 Tbsp. packed brown sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
- 1 3/4 cups solid pack pumpkin
- 1 egg
- 2 Tbsp. vegetable oil
- 2 1/4 cups milk
make it
1) Combine first 7 ingredients in a large mixing bowl.
2) Combine remaining ingredients in a small bowl.
3) Add pumpkin mixture to flour mixture; stir just until moistened.(Batter may be lumpy)
4) Heat skillet over medium heat. Brush with oil. Pour 1/4 cup batter for each pancake; flatten slightly with back of spoon. Cook until bubbles form on surface & begin to burst. Flip. Cook for 1-2 more minutes or until golden brown.
Notes
Great for a fall morning breakfast. Serve with warm maple syrup.
