Great Grandma's Mincemeat Cookies

what you need
- 3 1/4 cups flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 1/2 cups sugar
- 1 cup shortening
- 1 1/2 tsp. vanilla
- 1 egg, well beaten
- 1 pkg. (9 oz.) condenced mincemeat crumbled or boiled down see note *
- Or 1 jar (27 oz.) mincemeat only use about 1 1/2 to 2 cups
make it
Preheat oven to 425 degrees. In medium bowl sift together dry ingredients set aside. Cream together sugar and shortening until fluffy. Beat egg in separate bowl.
Add beaten egg and vanilla to sugar and shortening mixture. Slowly add dry ingredients to sugar and shortening mixture. Add mincemeat mix well.
Drop by teaspoonfuls 2 inches apart onto greased cookie sheet. Bake for 10-12 minutes.
Notes
*Great Gramdma always used the 9oz pkg and would boil it down with about 1 cup of water, she'd let it compleatly cool down before she added to cookie mixture.*
