what you need
- 1 lb. fat pork, ground
- 1 lb. seeded raisins
- 1 cup boiling water
- 2 cups sugar
- 1 cup molasses
- 2 Tbsp. cinnamon
- 1 Tbsp. nutmeg
- 1 Tbsp. cloves
- 1/2 tsp. salt
- 2 1/2 cups flour
make it
In large bowl place fat pork, ground and seeded raisins. Pour over this boiling water. Stir well to dissolve fat pork and add remaining ingredients.
Spray 9 x 13 cake pan with Pam and flour. Pour in the cake mixture and bake slow at 325 degrees for 1 hour and 15-20 minutes. Test with toothpick.
After cooled may be cut into 8 sections and each section wrapped in foil and then stored in fridge. Each section is sliced into 1/4" slices and served.

This recipe I am handing down to you is from my great-grandmother from (SCOTLAND), and I am 71 yrs old so you know this is an old time recipe. I baked it for my grandfather on his 75th birthday and when I had it all mixed it seemed so heavy, but I baked it and it came out of the oven just as heavy and I was so afraid I had done something wrong but he said it was considered to be like a heavy fruit cake and it was as good as hers which pleased me very much.
Will keep up to 6 months. As for the 6 mo. it keeps, we have never kept it that long as it is a great gift giver for friends and family.
