Aunt Liz's Lime Cucumber Salsa

what you need
- 3 large cucumbers
- 1 or 2 cloves of garlic
- 1 jalapeno pepper
- 3 green onions
- 2 Tbsp. fresh cilantro
- 2 Tbsp. lime juice
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1/4 tsp. pepper
make it
Seed and dice the cucumbers, mince the garlic, finely chop the jalapeno, chop the green onions, and mince the cilantro.
Place everything in a large bowl and mix.
Refrigerate at least 2 hours. Serve cold with white corn chips.
Notes
Fresh cilantro and freshly squeezed lime juice is the key to great salsa!
Beware the jalapeno juice when you chop it up.
