Sensational Raspberry Topped Brownies

what you need
- 1 cup soft margarine
- 2 cups granulated sugar
- 4 heaping Tbsp. cocoa powder
- 4 eggs
- 1 tsp. vanilla
- 1 cup all purpose flour
- Icing
- 2 Tbsp. soft margarine
- 2 cups icing sugar
- 1 tsp. vanilla
- 2 Tbsp. cocoa powder
- 2 Tbsp. boiling or hot tap water
- 1/4 cup raspberry jam
- 1/2 cup fresh raspberries (optional)

Mix margarine and sugar with wooden spoon until well blended. Add cocoa and mix well again. Add beaten eggs and vanilla - mix well. Add flour and stir until just combined and smooth.
Bake in 9x13-inch glass baking dish (sprayed with Pam) at 350 degrees F for 40-43 min.
Meanwhile, make the Icing - combine all ingredients and beat with electric beaters until smooth (if you need to, add more water to make the icing smooth but not runny).
After brownies come out of oven, let cool 3 minutes and then spread icing on. Let cool 10 minutes and then spread on raspberry jam and top with raspberries if you want.
Notes
You can also make these without the raspberry jam - they are for the chocolate lover!
Alternate flavor - Use strawberry jam and strawberries if you prefer or whatever fruit variation you like best!
