what you need
- 1 pound cooked, shredded chicken meat
- 1/2 cup water
- 1 package White Chicken Chili seasoning packet
- 1 can (8 oz) White Northern Beans
- 1 tomato, diced or one can of diced tomato
- 1 can diced green chilies
- 1 can (8 oz) corn
- 1 dash black pepper
- 1/2 cup Philadelphia Cream Cheese
- 1/2 cup shredded cheddar cheese
make it
Place all ingredients except cheddar cheese in a crock-pot on low.
Cook for at least four hours, stirring occasionally.
Serve warm sprinkled with cheddar cheese, salsa, or sour cream.
Notes
This year I substituted leftover turkey for the chicken and it turned out great.
For a full meal we serve this with a cheese quesadilla or warm tortillas.
Also, you can cook the chicken in the crock-pot with 2/3 cup of water until the chicken falls apart then add all of the ingredients to the chicken. The chicken is really moist if you cook it this way.
