Almond Paste Cookies (Italian)

- 1 lb. almond paste or (15 oz. can)
- 5 egg whites
- 2 cups granulated sugar
- 14 Tbsp. plain bread crumbs
- 1 bottle maraschino cherries
make it
Place almond paste, egg whites, sugar, and bread crumbs in mixing bowl and mix on medium speed until well blended (about4-6 minutes). You may also color mixture with food coloring. Refrigerate dough for at least 2 to 3 hours.
Form dough into small balls about one inch in diameter, or you may use a cookie press or shooter to make cookies. Place on ungreased cookie sheet. Press ½ cherry onto center of each cookie.
Bake at 350 degrees 15 to 18 minutes or until light golden color. Cool on rack and then place in airtight container to store. These cookies can be frozen for future use.
