what you need
- 1 pkg. yellow cake mix
- 1 lg. can mandarin oranges, 1/2 drained
- 1 pkg. cream cheese, room temp.
- 1 lg. can crushed pineapple, drained
- 1 sm. Cool Whip
make it
Prepare cake mix as directed but add the can of mandarin oranges to the mix at the last minute. Beat 30 seconds and bake.
In separate bowl mix cream cheese and pineapple together well, then fold in Cool Whip, place in fridge until the cake is cool.
Let cake cool completely, and then add Cool Whip mixture on top. Keep in fridge until ready to serve.
Notes
In the summer I make this into a punch bowl cake. I layer the cake and Cool Whip mixture with a layer of strawberries and vanilla pudding. I have made this for 4 years for our New Years Eve parties. It’s always a hit and it’s always a request. Enjoy!!
