what you need
- 6 boneless chicken breasts
- 3 beaten eggs
- 2 cups Italian Bread Crumbs
- 1 1/2 cups olive oil
- 1 tbs minced garlic
make it
Clean (trim off all fat and skin) and rinse chicken breasts. Beat the eggs. Soak chicken breasts in eggs for approx. 3 minutes.
Roll or pat chicken breasts in bread crumbs. Put olive oil in pan with garlic on med. to low heat.
Place chicken breasts in pan in single layer, and place lid on pan. Cook till golden brown on both sides (approx. 1 1/2 hours - time may vary and could be shorter.)
Notes
This chicken and always a nice quick meal along with a spinich salad and roasted or baked potatoes.
This can also be made in strips by cutting the chicken in strips before soaking in eggs.
Great little snack for those long trips to Grandmas' house in another state or cross country. Kids will love the finger food style.
