- 8 oz. cream cheese, softened
- 1/2 cup sugar
- 1 Tbsp. lemon juice
- 1/2 tsp. vanilla, divided
- Dash of salt
- 2 eggs
- 1 graham cracker pie crust
- 1 cup sour cream
- 2 Tbsp. sugar

Preheat oven to 325. Combine cream cheese, 1/2 cup sugar, lemon juice, 1/4 tsp. vanilla, and salt. Beat until well blended. Add eggs, one at a time, mixing well after each.
Pour into pie crust and bake 25 to 30 minutes. Then combine sour cream, 2 Tbsp. sugar, and 1/4 tsp. vanilla. Mix well and spread over pie. Bake another 10 minutes.
Chill until firm and top with fruit if desired.
