what you need
- 1 box Kraft Macaroni and Cheese
- 2 Tbsp. canola oil
- 1/2 cup red onion, chopped
- 2 stalks celery
- 1/2 to 1 whole fresh bell pepper, chopped
- 2 cloves garlic, minced
- 1 1/2 lb. ground beef
- 1 can (14.5 oz.) Mexican stewed tomatoes, chop tomatoes
- 2 cans (8 oz. each) tomato sauce
- 10 to 15 oz. can corn, drained
- 2 Tbsp. fresh parsley, chopped
- 1 cup shredded cheddar cheese

Boil macaroni, al dente, drain and set aside. Heat oil in large skillet, saute onion, celery, bell pepper, and garlic until onions are transparent.
Add ground beef and cook thoroughly, drain fat. Add stewed tomatoes (chop tomatoes), tomato sauce, and drained corn. Add macaroni and break up gently with wooden spoon; heat thoroughly.
Prepare package cheese by adding 2 Tbsp. melted butter and 1/4 cup milk. Mix with a fork, add to skillet. Add parsley, remove from heat, and top with shedded cheddar cheese.
