what you need
- 2 cups flour
- 2 cups milk
- 2 eggs
- Crisco (for pan frying)
- 1 jar Smucker's Current Jelly
- Powdered sugar
make it
Temperature in pan is important to have crisp and thin pancakes, approx. med-high. Add flour, milk, and eggs to bowl. Whisk into thin liquid.
Take ladle full and pour directly into center of well greased pan. Turn pan in clockwise direction, until mix is a thin layer all across covering the bottom of pan (may have to add more Crisco). Wait until top is dry & bottom is brown, then flip over, do not break. Fry until golden brown on both sides(should be crisp).
Put onto plate and smear with a thin coating Smuckers current jelly (is best for sweet-tart taste). Roll up end to end like a log and sprinkle with powdered sugar. Repeat until all done.
Notes
Good for anytime of the day. "Love goes through the stomach." quote from Helga.
For two people just take 1/2 the recipe -- will make 4 pancakes.
Optional: substitute jelly for strawberries in Grand Marnier sauce & sour cream.
