what you need
- 1 chopped small red onion
- 1 chopped med. red pepper
- 1 pound large, ready-to-cook shrimp
- 1/4 bottle oil and vinegar dressing
- 1/3 cup halved, pitted Kalamata olives
- 1/4 cup bottled dressing
- 1 Tbsp. lemon juice
- 2 tsp. grated lemon zest
- 9 oz. bag pre-washed baby spinach
- Crumbled feta cheese

Coat a large nonstick skillet with nonstick spray. Heat on med-high heat. Add onion and red pepper. Saute 2 min. or until soft.
Add the shrimp and oil and vinegar dressing. Cook just until shrimp are done (about 3 min.) Remove from heat.
Stir in olives, bottled dressing, lemon juice and zest. Immediately pour over the spinach; sprinkle with cheese.
