VERY Healthy TURKEY Meatloaf

what you need
- 1 tablespoon margarine
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 pkg. (20 oz.) EXTRA LEAN ground turkey breast
- 1/2 cup fresh bread crumbs
- 1 large egg
- 3/4 cup ketchup, divided
- 2 teaspoons Worcestershire sauce
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

Preheat oven to 350 degrees. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally.
Transfer mixture to a large bowl; cool 5 minutes. Add turkey, bread crumbs, egg, 1/4 cup ketchup, Worcestershire, salt and pepper to onion mixture; mix well. Pack into an 8 x 4-inch loaf pan. Spread remaining 1/2 cup catsup over top.
Bake for 50 to 55 minutes or until no longer pink in center and internal temperature of loaf reaches 165 degrees. Let stand at room temperature 5 minutes before slicing.
Notes
Very important to use EXTRA LEAN turkey breast only, not just ground turkey. That is much higher in fat. If you have a meatloaf separator pan (double layer nested pan that allows the grease, etc. to drip through to the bottom leaving the meatloaf not greasy), that is the best for this recipe.
