Porcupine Meatballs from Nebraska

what you need
- 1-1/2 pounds lean ground beef
- 3/4 cup long grain white rice
- 1/2 cup chopped onion
- Salt and black pepper, to taste
- 1 can condensed cream of tomato soup
- 1 can condensed tomato bisque soup
- 1-1/2 cups water

In a large bowl, mix ground beef, rice, onion, salt and pepper together. Form the mixture into balls approximately 1-1/2" diameter each. Place meat balls in a 2 quart pot.
Mix soup and water together, pour over the meatballs in the pot; stir. Let mixture come to a boil; reduce heat and cover.
Gently stir occasionally; remove from heat after 50-60 minutes - or when rice is done - and serve.
Notes
One of our family favorites, we usually have green beans and a fresh lettuce/veggie salad with this.
