what you need
- 1 can Eagle Brand or Meadow Gold sweetened condensed milk
- 1/2 cup lemon juice (ReaLemon)
- 1 teaspoon grated lemon rind
- 2 egg yolks
- 1 baked (8-inch) pastry shell or 8-inch graham cracker crust
- 2 egg whites
- 1/4 tsp. cream of tartar
- 1/4 cup sugar
make it
Combine sweetened condensed milk, lemon juice and rind. Blend in egg yolks. Pour into pastry shell.
Beat the egg whites with the cream of tartar & sugar (add sugar just 1 Tbsp. gradually). Beat until peaks form. Pile over the filling gently.
Bake @325 for 12-15 minutes or until meringue is just golden brown.
Notes
This was our beloved Nanny's favorite pie -especially in summer.
Sometime she would use lime juice & a little green coloring, thus "key lime" (a little coloring means stick end of toothpick in green cake color & them swirl it into the filling mixture for just a little color).
