what you need
- 3-4 tomatoes
- 2 yellow peppers
- 2 green peppers
- 2 red peppers
- 1 sweet, red onion
- 1 regular size can of whole kernel corn
- 1 regular size can of black beans
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 Tbsp. lime juice
- Fresh cilantro
make it
Place tomatoes, peppers and onion in food processor, or blender.
Blend until chopped fine.
Add remaining ingredients.
Notes
Serve with corn chips such as "scoops". Also great as side with seafood.
Delicious as is, but can make hotter by adding habeneros or hot pepper sauce, but try it like this first!
