what you need
- 1 and 1/2 pounds lean ground beef
- 2 eggs
- 1 cup Old London Italian style breadcrumbs
- 1 can (14 oz.) Del Monte Italian style diced tomatoes, slightly drained
- 1 medium yellow onion, diced
- 1 teasepoon diced fresh garlic
- 1/2 cup asiago cheese, grated
- 1/2 cup fontinella cheese, grated
- Additional breadcrumbs (optional)
- 1/4 cup mozzarella cheese

Preheat oven to 350 degrees. Grease a four quart loaf pan. In a large bowl mix all ingredients well except for cheeses. (About 30-40 strokes) Gently fold in grated asiago and fontinella cheese. If consistency is too soupy, add additional breadcrumbs.
Spread mixture in prepared pan, and bake at 350 for 55 minutes. Add mozzarella cheese on top of meatloaf and bake for additional 10 minutes. Let meatloaf sit for ten minutes before cutting.
Notes
If you have a hard time finding fontinella cheese, Kraft parmesan is a great substitute. If you use Kraft parmesan, cut the measurement to only 1/4 cup.
