what you need
- 1 1/2 cups boiling water
- 1 pkg. (8 oz.) JELL-O Peach Gelatin Dessert
- 2 cups cold ginger ale or club soda
- 1 1/2 cups graham cracker crumbs
- 1/2 cup (1 stick) butter or margarine, melted
- 1/2 cup sugar, divided
- 1 pkg. (8 oz.) PHILADELPHIA cream cheese, softened
- 1 tub (8 oz.) COOL WHIP, thawed
- 2 cups assorted fruits, such as red and green grape halves, strawberry halves, bluberries, raspberries and canned mandarin oranges
make it
STIR boiling water into gelatin in large bowl at least two minutes until completely dissolved. Stir in cold ginger ale. Refrigerate 1 1/4 hours or until slightly thickened (consistency of unbeaten egg whites).
MIX crumbs, butter and 1/4 cup of the sugar in 13x9-inch baking dish. Press firmly onto bottom of dish. Refrigerate until ready to fill.
BEAT cream cheese and remaining 1/4 cup sugar in large bowl until smooth. Gently stir in whipped topping. Spread evenly over crust. Place fruit in rows over cream cheese layer. Spoon thickened gelatin over fruit.
REFRIGERATE 3 hours or until firm. Store leftover dessert in refrigerator.
Notes
Soften cream cheese in microwave 15-20 seconds.
Peach gelatin may be substituted for other flavors.
