South of the Border Meatloaf

what you need
- 1/4 cup dry bread crumbs
- 1/4 cup milk
- 2 slices day old bread, heel part
- 2 pounds ground beef (I like to use 1 pound ground chuck, 1 pound 85/15 lean)
- 1/2 cup finely chopped onion
- 1 package taco seasoning
- 2 cups shredded Mexican style cheese, divided
- 1 small can sliced black olives
- 1 small tomato, diced
- 1/4 cup sliced green onions
- 1/2 cup salsa
make it
In a small bowl, combine bread crumbs with milk. Set aside. Grease a 9x5 loaf pan and place the 2 bread heels in the bottom. In a large mixing bowl, combine ground beef, onion, taco seasoning, and bread crumb milk mixture. Mix until well combined.
Spread 1/2 of meatloaf mixture in loaf pan on top of bread heels. Sprinkle 1 cup shredded cheese over meat, layer on top of cheese the sliced olives, tomatoes and green onions. Sprinkle on the other 1 cup of cheese over that. Spread rest of meatloaf mixture on top. Spoon the salsa on top.
Bake at 350 for 1 hour or until done. Let meatloaf rest 5-10 minutes covered after taking out of oven.
Notes
The bread heels are just to help soak up some of the grease, not to eat.
