what you need
- 2 cups Minute Rice (either white or brown whatever you have on hand) (approx.)
- Just under 1 cup warm water
- 2 cups of Kraft BBQ Sauce (approx.)
- 2 pieces chicken (can be bone in or boneless)
- 1 small can cubed pineapple cold
make it
1. Preheat oven to 400 degrees while rice and water are combined together in a bowl.
2. Let the rice sit for about 5 minutes.
3. Spray 2 Large pieces of foil with cooking spray (so rice doesn't stick).
4. Spoon the rice out of the water onto the center of each the foil sheets.
5. Drizzle with BBQ sauce.
6. Place the chicken on top of the rice.
7. Top with pineapple chunks and any remaining BBQ sauce.
8. Fold up the sides tightly so the pkg. stays together. Leave the top loosely folded over so heat can move throughout.
9. Place on a baking sheet and cook for 30-45 minutes depending on the size of chicken.
Notes
This recipe was inspired by the Foil pack Southwest Chicken Dinner recipe. (A great easy recipe to try.) Also please remember the foil will be hot when you remove from oven. Be careful of steam when you open the foil. A good way to check to see if it's done is checking the temperature. Temp. should be 170 degrees. Meat should be white and clear juices if any. Enjoy! Be safe. Wash your hands when handling raw meat.
Another variation is waiting until the chicken and rice is cooked to add the pineapple chunks.
