what you need
- 1/2 pork tenderloin, cut into 1-inch "steaks"
- 2 Tbsp. olive oil
- Salt and pepper to taste
- 2 large mangos
- 1 large onion
- 1/4 stick butter
- 8 oz. sliced white mushrooms
make it
Cook pork thoroughly in a fry pan using olive oil, salt and pepper. Brown on both sides.
Chop mango and onions into 1/4-inch pieces. Caramelize in the butter. Add mushrooms until just softened.
Plate pork and top with mango mixture.

Very easy and the combination of flavors is divine!
