what you need
- CRUST:
- 1 1/3 cups graham crackers crumbs
- 1/3 cup light brown sugar
- 1/2 teaspoon cinnamon
- 1/3 cup melted butter
- FILLING:
- 2 packages (8 oz. each) cream cheese
- 2 eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla
- TOPPING:
- 1 pint sour cream
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla
- 1/2 teaspoon almond extract

CRUST:
Blend graham crackers in blender until fine. Mix in bowl with brown sugar and cinnamon. Melt butter and mix into dry ingredients, blending well with a fork. Pour into a 9" pie plate and refrigerate 2 hours (important).
FILLING:
Soften cream cheese to room temperature. Beat with mixer until creamy. Add 2 eggs, beaten, sugar and vanilla, beating well after each. Pour into pie crust. Bake 375 degrees for 15-20 minutes. Remove from oven and let stand for 15 minutes. Increase oven heat to 475 degrees.
TOPPING:
Beat sour cream, sugar, vanilla and almond extract. Mix well. Spoon over slightly cooled filling. Bake at 475 degrees for 10 minutes. Cool and refrigerate at least 4 hours.
