Garlic Scalloped Potatoes

what you need
- 2 cloves garlic, peeled and cut in half
- 6 Tbsp. unsalted butter, plus more for dish
- 3 lb. (6 medium) potatoes, peeled and very thinly sliced
- Coarse salt & fresh ground pepper
- 3 cups heavy cream

PREHEAT oven to 350 degrees F. Rub 3 1/2 quart baking dish with garlic & then butter to coat generously. Arrange potatoes, seasoning each layer with generous salt & pepper as well as dotting with butter. Pour cream over the potatoes. Dot the top with any remaining butter.
BAKE until golden & bubbly & potatoes are tender when pierced with the tip of a knife; about 1 hour 20 minutes.
INCREASE temp to 400 degrees F & continue to bake until the top is brown; about 10 minutes more. Let stand about 15 minutes before serving.
Notes
You can prepare the potatoes ahead of time using an ice bath. Prepare a large bowl of water and ice. Dip the potatoes in water immediately after slicing to prevent discoloration. Allow them to dry on a plate, layering with paper towels. You can do this a few hours before you are ready to prepare this dish. This helps when you are trying to prepare a large meal for the holidays.
