what you need
- 1 package lemon Jell-O
- 1 cup boiling water
- 2 Tbsp. butter, melted
- 1 Tbsp. canola or olive oil
- 16 crushed graham cracker squares (1 cup)
- 2 Tbsp. sugar
- 1 carton (24 oz.) cottage cheese**
- 1-1/2 tsp. cornstarch
- 1/4 cup water
- 1-1/3 cups blueberries, divided
- 1 tsp. lemon juice

Dissolve Jell-O in boiling water and cool. Combine butter oil and crumbs; blend well. Press into the bottom of a 9" springform pan. Chill.
Process sugar and cottage cheese until smooth. Slowly add cooled gelatin. Pour into crust and chill overnight.
Mix sugar and cornstarch in a saucepan and stir in water. Add 1 cup blueberries. Bring to a boil; cook and stir for 2 minutes. Stir in lemon juice and process until smooth.
Refrigerate until cooled. Run a knife around the pan to loosen cake. Remove sides of pan. Spread berry mix on top and garnish with leftover berries.
