what you need
- 4 cups Minute Brown Rice, cooked
- 1 medium carrot, sliced
- 1/2 cucumber, sliced
- 1/2 onion, chopped
- 1 pepper, chopped
- 1 can corn, drained and rinsed
- 5 radishes, sliced
- 2 stalks celery, chopped
- 2 tablespoons vinegar
- 2 heaping tablespoons Grey Poupon Country Dijon Mustard
- 1 tablespoon olive oil
- 4 tablespoon lemon juice
- Salt and pepper to taste
make it
Mix in large bowl rice and veggies.
In small bowl whisk liquids and seasoning.
Continue to whisk as you pour the dressing over the veggie mixture. Stir all together and enjoy!
Notes
I picked up this recipe from a friend in France but modified it to my own taste. You can add any other veggies and leave some out if you like.
