what you need
- 1 lb. ground beef (or beef/sausage combo is optional for those who like it hot)
- 1-1/2 cans cream of mushroom soup
- 1 can sliced or diced mushrooms (optional)
- 5 lb. bag tater tots
- Shredded cheese
make it
Preheat oven to 450 degrees F. Brown ground beef in a skillet till it's nice and brown (can be slightly crispy). Mix in cream of mushroom soup and mushrooms.
Meanwhile, have a casserole dish lined with tater tots at the bottom of the dish (usually I use an 11x9-inch dish, but you can adjust the recipe for a larger pan). Spread the meat/soup mixture over the tater tots as thick or as thin as you want. Sprinkle a good helping of shredded cheese over that. Put another layer of tater tots over the top of that and sprinkle more cheese over the entire thing.
Bake for 45 minutes. Let stand for 5.
Notes
I usually use a mixture of cheese like mozzarella/mild cheddar/etc., etc. (usually labeled 'Pizza' or some kind of mixture of shredded cheeses in the store).
