what you need
- 2 cans (15 oz. each) black eyed peas, drained
- 1 can (15 oz.) whole kernel corn, drained
- 1 can (4 oz.) green chilies, chopped
- 1 green pepper, chopped
- 2 tomatoes, chopped
- 3/4 bunch green onions, chopped
- 16 oz. chopped black olives
- 2 cloves garlic, pressed
- 2 tsp. cilantro leaves
- 1 bottle (8 oz.) Italian dressing
- 1/4 to 1/2 cup white onion, chopped (optional)

Mix all ingredients together in a large bowl.
Serve with chips or crackers.
Can be made the night before and refrigerated.
Notes
Simple and quick to make, and always gets positive reviews.
Have substituted canned diced tomatoes (drained) when fresh tomatoes are not in season.
