Explosive Ricotta and Spinach Chicken

what you need
- 3 tablespoons olive oil, divided
- 1 cup chopped portobello mushrooms
- 1 package cleaned spinach
- 15 ounces ricotta cheese
- 1.5 pounds boneless skinless chicken breast
- Seasoning salt (optional)

Heat 1 tablespoon of olive oil over medium heat in skillet. Add mushroom and spinach, saute three minutes. Mix spinach and mushroom in medium bowl with ricotta cheese.
Clean chicken breast (removing any access fat). Sprinkle seasoning salt over chicken breast as desired (for flavor). Spread spinach, mushroom and ricotta cheese mixture over one side of chicken breast and fold chicken breast over cheese mixture.
In large non-stick skillet heat 2 tablespoons of olive oil over medium heat. Add chicken breast to skillet and cook until chicken is done.
Notes
Serve with flavored rice and veggies!
