what you need
- 1 small box elbow macaroni
- 1 lb. ground beef
- 1 small onion, chopped
- 1 can diced tomatoes
- 1 can tomato soup
- 6 cups water
- 6 beef bouillon cubes
- Salt and pepper to taste
make it
1. Cook the elbow macaroni according to the package directions.
2. Brown the ground beef and onion until cooked through and drain well.
3. Combine all ingredients in a large soup pot and cook over low heat for about 15 minutes.
Notes
This soup is even better if you let it sit for a while and reheat it. The pasta does absorb a lot of the water so feel free to add more as needed. For every additional cup of water you add just add 1 more bouillon cube. This soup is a kid’s favorite in my house and during the cold months it is made frequently.
Note: For a healthier soup you can substitute ground turkey for the ground beef, low sodium beef broth for the bouillon, and low carb pasta for the elbow macaroni.....it will still taste just as good.
