Potato Chip Chicken Fingers

what you need
- 1 lb. package boneless skinless chicken tenders
- 2 eggs
- 2 Tbsp. Kraft Ranch Dressing
- 3 cups flour, divided
- 2 cups crushed Lay's sour cream and onion potato chips (BBQ also works well)
- 1 Tbsp. Italian herb seasoning (optional, season to taste)
- 1 tsp. "Nature's Seasoning" (optional)

Wash and dry chicken tenders. Heat oil in fryer to 375. Beat together eggs and ranch dressing in a small bowl. Add 1 cup of flour to the crushed potato chips and put in shallow dish. In a separate shallow dish, mix remaining 2 cups flour and seasonings.
While the oil is heating, dip chicken tenders into the egg mixture, then coat in the potato chip mixture. Allow chicken to rest at least 5 minutes. Immediately before frying, dredge tenders in seasoned flour.
Drop into hot oil, and fry 10-12 minutes, or until golden. Gently turn tenders while frying to ensure even cooking. Place on paper towel to drain excess oil. Serve with Kraft Ranch Dressing or your favorite condiment!
Notes
This works best in a deep-fryer that immerses the tenders. However, you may also use a skillet deep-frying method, if you are more familiar with that method.
Also, experiment with different potato chip flavors to find your favorite!
