what you need
- Banana Bread
- 2 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- 3 very ripe bananas (1 cup)
- 2 eggs
- 1 tsp. vanilla extract (can substitute rum extract)
- 1/2 cup buttermilk
- 1 cup sugar
- 1/4 tsp cinnamon
- 1/4 tsp. nutmeg
- 1/2 cup chopped pecans or walnuts
- Brown Butter Icing:
- 1/2 cup butter
- 3 cups sifted powdered sugar
- 1 tsp. vanilla extract
- 3 to 4 tablespoons water

Banana Bread:
Sift the flour, baking soda and salt into a medium bowl and set aside. In a separate bowl mash the peeled bananas with a fork. Combine the eggs, vanilla, buttermilk, sugar, cinnamon, nutmeg and mashed bananas with a whisk or electric mixer at medium speed. Do not over-mix. The mixture should be lumpy.
With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter in to a buttered loaf pan.
Bake 45 minutes at 400 degrees F or until a toothpick inserted into the center of the bread comes out clean. Cool completely on a wire rack.
Brown Butter Icing:
In a small saucepan heat the butter over medium heat until golden brown, stirring occasionally. Remove saucepan from heat; stir in 3 cups sifted powdered and 1 teaspoon vanilla. Stir in enough water to make the icing the right consistency to drizzle. Drizzle on banana nut bread.
