what you need
- 1 can Del Monte Sunfresh Mango, diced
- 1 red pepper
- 1 red onion, chopped
- 1 jalapeno, chopped
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. sugar
- Salt and pepper to taste
make it
Dice up mango. Chop red pepper, onion, and jalapeno. Mix into a medium size bowl.
Mix vinegar, sugar, salt and pepper to taste and add to the bowl.
Stir and chill before serving.
Notes
I triple the vinegar and the sugar for this recipe. I like a lot of juice. However when I serve it, I do drain some of the excess off.
