Cottage Cheese & Broccoli Cornbread

what you need
- 1/2 cup butter, softened at room temperature
- 1 package (8 oz.) corn muffin mix
- 3/4 cup Breakstone's Cottage Cheese– fat free works ok
- 4 whole eggs
- 1/3 cup onions, chopped somewhat fine
- 1 teaspoon salt
- 1 package (8 oz.) frozen broccoli florets, chopped somewhat fine
make it
Preheat oven to 400 F. Mix together soft butter with corn muffin mix. Mix in cottage cheese and eggs. Add chopped onion, salt and chopped broccoli.
Pour into 8x8x2” baking pan or dish.
Bake uncovered in hot oven for about 24-35 minutes or until top crust is browning.
Notes
This is a recipe from Yankee land in Massachusetts but it is loved just as much in the South where we serve it to die-hard Southern Cornbread folks who think it is now their new “regular.”
