Nancy's Hawaiian Wedding Cake

what you need
- 2 eggs
- 2 cups flour
- 2 cups sugar
- 2 tsp. baking soda
- 1 cup chopped walnuts
- 1 can (20 oz.) crushed pineapple with juice
- For frosting
- 1 stick butter, softened
- 1 pkg. (8 oz.) Philadelphia Cream Cheese
- 1 teaspoon vanilla
- 1 1/3 cups confectioners' sugar (powdered) or until desired consistency

In a bowl mix all ingredients with a spoon. Pour into a greased and floured 9x13 pan.
Bake at 350 degree for 40-45 mins. Cool in pan and frost. (Ovens vary, check cake after 35 mins. Should be browned a bit and spring back when touched) Cool cake.
For Frosting:
Beat well with mixer. Spread onto cooled cake. Keep refrigerated.
Notes
Feel free to decorate. I sometimes use a cake comb (or fork) and stripe it, or make extra frosting and do borders, etc. Sprinkle with walnuts on top if you wish.
My family loves this recipe. A dear friend baked it for us when we lost our father. When I told her how much everyone liked it, I asked would you share your recipe with us. She laughed sheepishly and said, "I am embarrassed. I baked it for a funeral but it is called "Hawaiian Wedding Cake". No matter what the occasion, everyone will love this quick easy recipe!
