what you need
- 1 lg. can chunk white chicken (or can use precooked chicken breast)
- 4 cups shredded cheddar cheese, divided
- 2 pkg. crescent rolls (8/pkg.)
- 1 lg. can cream of chicken soup
make it
Preheat oven as directed on the crescent roll package. Spray 9 x 13 cake pan with cooking spray to prevent sticking. In large bowl, shred chicken and mix in 2 cups of shredded cheese.
Remove crescent rolls from sealed roll and separate. Fill each roll with approximately 2 Tbsp. of chicken/cheese mixture. Fold the sides in and roll toward the point. Place in baking dish with point under the roll. You should have some of the chicken/cheese mixture left over to mix in with the soup. Bake as directed on the crescent roll package or until lightly browned.
While the rolls are baking, add the cream of chicken soup to the bowl of remaining chicken/cheese mixture. Add approximately 1 more cup of cheese. Stir until well mixed. Place in microwave and heat on high for 5 minutes to get it nice and warm. BE CAREFUL - BOWL will be HOT!
Once cooking time for rolls has ended, sprinkle with remaining shredded cheese. Place pan back into oven for about 2 minutes or until the cheese is melted. Remove pan from oven and pour soup mixture over the rolls. Return pan to oven and continue to bake until the sauce is bubbling in the middle. Serve warm. Great reheated also.
Notes
I generally double this recipe as the kids love it and I enjoy the leftovers.
