Quick and Easy Pineapple Upside Down Cake

- 1/4 cup butter
- 2/3 cup packed brown sugar
- 1 can sliced pineapple (9 slices needed)
- Maraschino cherries (9 stem-less cherries needed)
- 1 box yellow cake mix (plus ingredients listed on box)

Preheat oven to 350°F. Melt butter in a 9x9 square pan in oven. Sprinkle brown sugar evenly over melted butter. Arrange the 9 sliced pineapple over brown sugar and butter mixture. Place the 9 cherries in the center of the pineapple slices.
Prepare the yellow cake mix as directed on the box. Pour the prepared cake mix over the pineapples.
Bake for 40-50 minutes until the center is cooked. After baking turn pan over immediately onto a platter, let the cake rest upside down a minute or two to let the juices soak into the cake. Serve warm or cold. Enjoy!!
