what you need
- 2 pounds ground beef
- 2 eggs
- 2 cans diced tomatoes (can use Ro*Tel), divided
- 1 large onion, diced small
- 2 Tbsp. A.1. Steak Sauce
- Few shakes of Worcestershire sauce
- 2 cloves of garlic, chopped finely
- 1 box Kraft Chicken Flavored Stove Top Stuffing Mix
- Salt & pepper to taste
- 1 can (8 oz.) tomato paste
- 2-3 bacon strips

Mix ground beef, eggs, 1 can of diced tomatoes, onion, steak sauce, Worcestershire sauce, garlic, pouch of Stove Top Stuffing Mix, salt and pepper together.
Put into large pan making a loaf. Take tomato paste and with a knife "ice" it like you would a cake. Pour other can of tomatoes over top. Place bacon strips on top of the loaf. Cover with foil.
Bake for 1.5 hours at 375°F. Check it every 30 minutes. Last 15 minutes of cooking time - take foil off, drain off grease, and let it cook uncovered until bacon on top is crispy.
Notes
I made this using 4 pounds of ground beef last weekend to feed a crowd. To do that you can buy a canister of the chicken flavored Stove Top Stuffing Mix and use the entire thing. Also add another egg. I also used 2 cans of tomato paste. My guests said it was the best meatloaf they had ever had. We had it for dinner - then sandwiches the next day.
