Lemon Chicken and Potatoes

what you need
- 2 lemons, divided
- 4 large potatoes
- 4 full chicken legs with thighs
- 4 Tbsp. olive oil
- 3 Tbsp. oregano
- 2 garlic cloves, minced
- Salt and pepper

Preheat oven to 350°F. Squeeze juice out of 1 1/2 lemons into bowl. Slice potatoes in wedges. Slice the other half of lemon.
Spray bottom of a large baking pan with a non-stick cooking spray. Place chicken in pan, place potatoes around and under chicken. Sprinkle chicken and potatoes with olive oil, lemon juice, oregano, garlic, salt & pepper. Roll chicken around to coat evenly. Tuck lemon slices in the pan.
Bake for 45 minutes. Baste chicken with pan juices. Bake for addition 15-30 minutes until chicken skin is browned and potatoes are tender, basting occasionally. Take chicken and potatoes, place them on a serving dish, and then pour pan juices over them. Serve and enjoy!
Notes
Goes great with sauteed green beans and Caesar salad! The pan sauces taste delicious as a dipping sauce for Italian bread.
