what you need
- Pkg. bone in chicken (amount and type are to preference)
- 2 cups 2% milk
- 6 large eggs, cracked with yolks and whites mixed together
- 2 cups all-purpose flour
- 2 cups corn flakes, crumbled
- Preferred seasonings
- Canola oil (or preferred cooking oil)
make it
Wash the chicken under hot water. Leave the skin on. Set on plate or tray. Have milk, eggs, and flour in separate bowls next to one another in this order. This minimizes amount of ingredients lost when prepping chicken. In flour bowl, mix in seasonings preferred and crumbled corn flakes.
Heat large skillet and 1 cup of canola oil (or preferred cooking oil) on medium-high heat until hot and then reduce heat to medium. Dip each piece of chicken in milk, then eggs, then roll in flour mixture and place in skillet. Do this one at a time so that when skillet is filled with one layer of chicken, you don't have pieces left in batter.
Cook chicken in oil, turning every 5 minutes, until chicken is dark golden brown on all sides. Check inside of chicken by cutting into it with a knife and looking for pink or bloody meat. If chicken is white or dark inside, depending on the type of chicken you preferred to cook, it is done. Repeat this process until all of your chicken is cooked thoroughly. Set cooked chicken on napkin lined plate, to soak excess oil.
Notes
Chicken is tricky. Make sure chicken is washed prior to cooking and make sure chicken is thoroughly cooked to avoid infectious disease.
Increase cooking time 3 minutes at a time per side of chicken, not heat, if chicken is not done at listed times.
Wash hands frequently during and after handling raw chicken to avoid cross-contamination of dishes, counter, utensils, and/or other food. Disinfect any surfaces that may have come into contact with raw chicken during prep or cooking.
