what you need
- 1 large can crushed tomatoes
- 1/2-3/4 purple onion
- 1 plump garlic clove
- 2 jalapeno peppers
- 1 fresh bunch cilantro
- Salt to taste
make it
In a food processor (or blender) add the crushed tomatoes. Cut up & add the purple onion, garlic, jalapeno peppers (leaving in the seeds will make it spicy--I usually remove the seeds from one of the jalapenos & leave in the seeds from the second one--experiment!) Rinse & remove the stems from the cilantro, add about 1/4-1/3 tsp. salt.
Pulse to desired consistency…I like mine a little chunky...the best darned fresh salsa around.
Notes
For something a little different--stir in about 1/2 can each of drained whole corn & black beans...yum! Everyone raves about this salsa & says I should bottle & sell it...hmmm.
