what you need
- 4 salmon fillets
- Mayonnaise
- 1 cup chopped pecans
- 2/3 cup bread crumbs
- 4 Tbsp. parmesan cheese
- 2 Tbsp. parsley
- 2 Tbsp. butter, melted
- 1/2 cup peeled and chopped cucumber
- 1/2 cup vanilla yogurt
- 1/4 tsp. dry or 1/2 tsp. fresh dill
- 1/8 tsp. garlic powder
make it
Spread mayonnaise over each clean fillet. Mix the pecans, bread crumbs, parmesan, parsley and butter; press onto each fillet. Place fillets on a sprayed baking dish or sprayed, foil-lined baking sheet.
Bake at 425 degrees F for 15-20 minutes or until the fish flakes.
Mix cucumber, yogurt, dill, and garlic powder in a bowl and serve with salmon.
