what you need
- 1 eye of round roast (3 lb.)
- 1 can Ro*Tel (with cilantro and lime)
- 1 can diced tomatoes
- 1 small onion, diced
- Water - to cover meat
- 2 cups rice
- 2 small cans or 1 big can black beans
- Hot sauce to taste (optional)

Place roast, both kinds of canned tomatoes, onion, and water in crock-pot.
Cook on high for 8 hours (or you can cook on low for 10).
When meat is tender, shred the meat. Cook rice according to directions and heat beans. Serve meat over the black beans and rice. Add hot sauce for additional flavor and heat.
