what you need
- 2 cups (500 ml) whole-wheat flour
- 1 Tbsp. (15 ml) baking powder
- 1 tsp. (5 ml) ground cinnamon
- 1 tsp. (5 ml) ground ginger
- 1/4 tsp. (1 ml) ground nutmeg
- 1/2 tsp. (2 ml) salt
- 3 eggs
- 2 cups (500 ml) milk
- 1/4 cup (60 ml) vegetable oil
- 3 Tbsp. (45 ml) honey
- 1/2 cup (125 ml) chopped walnuts or pecans

Combine the flour, baking powder, spices, and salt in a mixing bowl.
In a separate bowl, whisk together the eggs, milk, oil, and honey. Add to the dry mixture and stir to combine - some lumps are okay, do not over mix. Fold in the chopped nuts.
Pour about 1/4 cup (60 ml) batter per pancake on a heated, lightly greased griddle or large skillet over moderate heat and cook until bubbles for on the surface, about 2 minutes. Flip and cook until golden, about 1 minute. Serve immediately or keep warm in a warm oven.
